Default can sassafras trees or Russian olive trees become bonsai's?

i would really like to know, cause the both seem to be very interesting plants.

Many trees can be trained from early sappling to take shape of bonsai trees; they will never become a bonsai.

It won't be shaped easily, and you may feel disappointed on the results.
